Why does a normal roast profile curve have a skewed U-shape?
- The beans are really hot when they enter the roaster and because the roaster is cold the beans are cooled down in the beginning of the roast
- The bean probe is heated in the empty drum during preheating but is cooled down when the room temperature beans are added. Eventually the bean probe catches up with the temperature of the beans being heated and it starts to go up again
